{TWD} Vanilla Ice Cream

Guess what I got!!!!

When my parents were here a few weeks ago they got me an ice cream maker! :) My birthday is in September so it's early but the point was so we could take advantage of it during the summer. Thanks mom and dad!! :)

Of course leave it to brilliant me to do something stupid. I poured my custard directly into the black part without the canister. That was a mess. At least it didn't leak too much. The first time we used the ice cream maker I don't think I let the canister stay in the freezer long enough as our ice cream stayed pretty melty instead of churning up nice and thick.

This time was a different story though.
I know this was supposed to be vanilla but I am just not a fan of plain ol vanilla. So, I added Andes Mint pieces. To die for! This is creamy, minty and delicious! Yum! Make sure to check out Lynne's blog for the recipe!

Oops, but yum!

This morning I asked my family if they wanted spaghetti or tacos for dinner. Spaghetti was the winner so I was looking forward to making it when I got home. Unfortunately for me I forgot to check on the sauce. I usually buy two or three jars on sale but apparently forgot to get some the last time I was at the store. Luckily I had a box of scooby doo kraft mac and cheese. The kids like that stuff so I made that for them. For me and the hubby I made mini wagon wheel pasta with heavy cream and grapefruit zest. Yeah.....payday is Thursday, I need to get to the store. Surprisingly both of us really like the sauce for the pasta. It was really light (weird for heavy cream) and the citrus flavor was delicious!

So, I guess it was a good thing I forgot to look for sauce since we tried something new and both really liked it.

Bobby was recording the other day in Spring Hill. We went with him to check out the studio and then I left him there. The kids and I went letterboxing. This is one of my favorite photos from the day. :)

Emotional Turmoil

I am feeling really out of sorts today. I am on the verge of tears for all kinds of reasons. I got a second class to teach at University of Phoenix so that is good for the pocketbook. However, I just spent the last two days at home with my Little Guy who had pink eye and a fever and my daughter that we hadn't worked out childcare for. It just reinforced how much I want to be with them every second I can. Bobbys brother is being deployed again so that is on my mind. Being far from family is also creating turmoil in my heart and mind. We watched Gran Turino last night and it really affected me. It was one of those movies that has a very distinct Jesus figure in it.
The kids start school soon and my baby boy is going to Kindergarten. I am not sure how 5 years have passed and he is now big enough for Kindergarten. I was thinking about him walking to class by himself and what a huge step that will be. I can't even fathom him being independent enough to do that. It kind of breaks my heart.

So, I am emotional today. Blah!

Blog slacker

I feel like I have fallen off the face of the bloggy earth. :) I have been teaching a class at University of Phoenix the last few weeks, my parents are in from California, we took a trip to the Biltmore in Ashville NC, had my daughters 7th birthday party at Chuck E Cheese, Lifestock, and 4th of July. It has been busy! I feel very blessed that my parents have been here. They have watched our kiddos while Bobby and I have been working. It has been nice to not worry about where they are going in the mornings. That is still an issue I am struggling with....I didn't have kids to pawn them off on someone else to raise for me. But, I know the places they have been going are loving and trustworthy so that at least makes me feel a little bit better.

I have a few things going on in my heart and head right now that I am praying about.

Our Durango has a new transfer case, a new pressure hose and a new serpentine belt. We really want to sell it and get something smaller. Hopefully that will happen soon.

Mom and dad go back to Cali on Thursday :( It has been really fun having them here. Mom has cooked for us a couple of times. Little Man took a two hour nap leaning against Papa who would not move from the spot so he wouldn't wake him. Munchkin has somehow picked up how to do a southern accent and fight with Papa with it. They like to tease each other.

So, all that to say it has been a busy couple of weeks. I did make my TWD recipe last week and didn't get it posted. Maybe tonight I can post it along with this weeks.
